EMPANADA



Ingredients:

1 small onion
2 cloves garlic chopped
1 tbsp oil
1/4 cup diced small carrots
1 lb ground beef
1/2 cup diced small potato
1/4-cup raisins
1/3 cup frozen peas
3 tbsp sugar
Salt and pepper
1 tsp paprika
Oil for frying
1 egg white
wonton wrap


Directions:

1. Sauté beef until starts to brown.
2. Add onion, garlic, and carrots. Potato and salt, pepper, paprika and sugar
3. Sauté until the potatoes have softened about 10-15 minutes.
4. Add raisins and peas until liquid evaporated



5. spoon 1 tbsp of the filling into the center of each dough.lighly brush the edges of the dough with eggwhite



6. fold the dough in half and crimp the folded edges with the tines of a fork.

7. Deep fry until golden brown



Crust



3 cups flour
4 tbsp sugar
6 tbsp water, cold
1 piece raw egg
1 cup butter, cold
1/2 tsp baking powder
1/2 tsp salt

Make the Dough

1. In a mixing bowl, combine the dry ingredients starting from the flour, sugar, baking powder, and salt then mix well.


2. Cut the butter into small thin pieces place in the mixing bowl with the dry ingredients.(the butter should be cold and solid before doing this)

3. Add water gradually and mix all the ingredients thoroughly until a dough is formed. You may use a pastry blender to easen the process.

4. Divide the dough into individual pieces by grabbing a piece from the whole mixture and rolling it in your hand until a spherical shape is formed. Do this until all the dough is consumed. Set aside in a cool place for at least 20 minutes

5. Flatten the spherical dough py pressing it with your palm against a flat surface. Use a rolling pin to flatten it fully while creating a round shape.

6. Place some filling at the middle of the flattened dough. Fold the dough so that opposite ends meet (you should have formed a half moon shaped dough)then press the edges and seal. (refer to the video for the technique).

7.  After all the fillings are consumed, crack the egg and separate the white from the yolk. Beat the egg white lightly and mix a little water.Glaze the crust by brushing the egg wash.

8. Put a wax paper on top of a baking tray or grease the baking tray then arranged the sealed doughs.

9. Pre-heat oven at 400 degrees Fahrenheit for 10 minutes. Bake the sealed doughs for 25 minutes at the same temperature.
10. Remove from the oven.

11. Serve hot. Share and Enjoy!

CHOCOLATE CAKE

INGREDIENTS:

1 box Duncan Hines or Pillsbury devils cake mix
1 box instant chocolate pudding
1 egg
1 cup sour cream

1/2 cup veg. oil
1/2 cup warm water
1 bag semisweet chips


Preheat oven to 350 F

Mix all Ingredients
Bake fo 55-60 min. Sprinkle with powdered sugar

French Meat Pie (for 2 pies)



1 lb ground pork
2 lbs ground beef
2 cups water
1 tsp salt
1/2 tsp allspice
1/2 tsp ground gloves
1 finely chopped onion
Garlic to taste
4/5 potatoes boiled and mashed(do not whip)
1/4 tsp pepper
1/2 poultry seasoning( optional)

Directions:

1. Combined beef, pork, onion, salt, allspice, ground gloves, pepper and water in a medium sauce pan. Mix well.

2.  cook, covered, in low heat until meat are cooked through.  Stirring constantly.

3.  add potato to meat mixture.

4.  Put mixture to a prepared pie crust and cover with remaining pastry.
    Ready to be bake
  1. Bake 450 for 20 minutes or until crust are golden brown.

Sometimes if you are making something the ingredients have a non common type of measurements.  I just want to share this to everyone incase you might need this. 

Household Measures:


120 drops of water=1 tsp
60 drops thick fluid=1 tsp
2 tsp=1 dessertspoon

2 cups=1 pint
2 pints=1 quart
4 quarts=1 gallon
3 TBS flour=1 ounce
2 TBS butter=1 ounce
2 cups granulated sugar=1 pound
3 3/4 cups powder sugar=1 pound
3 1/2 cups wheat flour=1 pound
5 1/3 cups dry coffee=1 pound
6 1/2 cups dry tea=1 pound
2 cups shortening= 1 pound
1 stick butter= 1/2 cup
2 cups cornmeal = 1 pound
2 3/4 cups brown sugar=1 pound
2 3/8 cups raisins=1 pound
9 eggs=1 pound
1 ounce yeast= 1 scant Tablespoon

What's Cooking?

My kids been requesting me to make meat pie.  I guess i have to make it today.  Since it is cold outside  and we are all done w/ our Christmas shopping.  Today is the day for baking for me.  I have to go to grocery to buy what i needed for the meat pie and I will ame Chocolate balls ahead for Christmas that is if it will last that long.  :-)

Oops I will be doing my grocery shopping today.  My pantry is empty need to be filled up again.  I need to plan what i will be cooking for Leonas party in a couple weeks.  For her classmates and friends I will just have pizza and make my own cup cakes and let them make their own sundae ice cream.

What else I need to do today.  Just play air I guess.

Pandesal Recipe

For some reason i am craving for pandesal.  I want to make my own so I browse over the net and here is what i found
I will try to make this one tomorrow.  hope this taste good.  Let you know how it will came. 

Everyone loves it.  Friend even made to order.

Anyway here is the recipe.

Ingredients:

4 cups all purpose flour
1/2 cup white sugar
3/4 tsp salt
3 tsp yeast or 1 pouch active yeast
1 tbsp b. Powder
5 tbsp butter
1 egg
1 tbsp oil
3/4 cup milk
1/2 water
1 cup bread crumbs

Cooking Procedure:

1. In the mixing bowl, combine the dry ingrdients starting with the flour then the salt, sugar, yeast and baking powder. Mix well.

2. Add the egg, butter, cooking oil. Place water and milk in microwable container and heat it up for 45 minutes before adding to your pandesal mixture. Knead until a dough is formed. Use your clean hands to effectively mix the ingredients.

3. In a flat surface, knead the dough until the texture becomes fine.

4. Mold the dough until shape becomes round then put back in the mixing bowl. Cover the mixing bowl with damp cloth and let the dough rise for at least 1 hour

5. Put the dough back to the flat surface and divide into 4 equal parts using a dough slicer

6. Roll each part until it forms a cylindrical shape

7.Slice the cylindrical dough diagonally (These slices will be the individual pieces of the pandesal)

8. Roll the sliced dough over the breadcrumbs and place in a baking tray with wax paper (makes sure to provide gaps between doughs as this will rise later on)

9. Leave the sliced dough with breadcrumbs in the tray for another 10 to 15 minutes to rise

10. Pre heat the oven at 375 degrees fahrenheit for 10 minutes

11. Put the tray with dough in the oven and bake for 15 minutes

12. Turn off the oven and remove the freshly baked pandesal.

13. Serve hot. Share and enjoy.

Thanksgiving Dinner

Everyone is getting busy on what they are going to have for Thanksgiving dinner. For a change I am not one of them. My family and I will be going to my husband’s cousins for dinner, which the husband is a chef. So foods are delicious. I will be bringing spring roll. I will be making chocolate cream pie everyone loves this pie. This will be a no diet day.

But on the weekend I will be cooking turkey. This will be an exclusive family thanksgiving dinner. I will be preparing everyone’s favorite food. Kids already have requests.

Anyway either you are cooking or not. Enjoy the time spending with your family. Don’t forget to have fun and be thankful of what you have.

Smell Fishy

I don't know why but my kids are so picky w/ foods.  When they were little girls they ate anything I feds them.  Now forget about it.  For supper I prepared baked fish.  Fish that already been deboned but just the smell along they hate it.  I don;t know what to do.  I just hope that the picky time will pass.  I wish i can just cook anything and no one will complain and say "I don't like this and that".  Unlike my husband whatever i put on the table as long as no fish heads he will eat in a heart that if he is not stuck infront of the computer playing a game.  No matter what I have no escape.  Maybe I will let them starve or cook their own meal.  we will see how they like that.  What you think?  Is it a good idea?

What's for dinner?

Everyday, every morning before i go to work i have to think what i will be cooking for dinner. I need to defrost a meat in order to be ready once i get home. I have to think foods that I did not cook for a while. My kids are so picky. They might like this certain food this time but don't expect they will still on the next time. I have to learn to cook dfferent dishes. This is why I have this blog maybe I can share some recipe(s) to some mother out there.

What's wrong w/ me?

I been trying to loose weight but it is hard for me to do it. I just need a good motivation. The problem in me is i love to cook and eat. Especially this kind of weather. Where it is cold outside. My kids don't mind it if i cook all the time specially baking cookies. They can't say no to it. They always like to help me to cook. I don't know if they really are helping me. But at least they have a little bit of idea about cooking. The early i will show to them how to cook the better for them. train them while they young is the best right.

Day w/ the Family


I can't remember when was the last time I spend time with just my family alone. For almost 2 years there is always something going on. Our weekend always booked. Working Monday through Friday sometimes working overtime, coming in early and living late. My husband keep complaining but as he always said whatever make me happy he will do it.

Today 3 day weekend because tomorrow is 4th of July. I did not do any commitment to any parties but to spend time with just my family. We went to Colt State park. An open field near the ocean. A lot of people go there. Places where do people go fishing, have their parties ore even a wedding. Very nice place.

We went to the park brought some foods with us. Let the girls fly their kites. Went to the dock see people fishing, see if they have any luck. Walk along the sea shore. Wow it was amazing spending a day without rushing ourselves. I love it.

This makes me realize even how much time i spent with my family I still need to spend more time with just them. Don't get me wrong i love my friends but my family will come first.
