Pineapple Brown Sugar Ham Glazed

It was sunday and I was thinking to cook something different for my family for dinner.  I have this ham in the freezer.  I was thinking to cook this instead.  I will use this recipe for glazed.  It taste good home this bring flavor to my ham.

INGREDIENTS:

1Cup Brown Sugar
1Teaspoon Mustard
2Tablespoons Flour
1/4Cup Pineapple Juice
Pineapples Slices
Maraschino Cherries (Optional)

Direction:


  1. 1Combine brown sugar, mustard and flour.
  2. Add pineapple juice and mix thoroughly.
  3.  Spread mixture over ham. 
  4. About 1/2 hour before ham has finished baking, remove from oven and pour off drippings. 
  5. Decorate with pineapple slices and maraschino cherry halves in the centers (may be secured with a toothpick). 
  6. Return ham to oven for about 30 minutes to allow glaze to set.

Tortellini Soup


Todays menu. Hubby and my mom likes it but not my girls. Good thing the girls are sleeping over at a friends house and they're having their dinner with them.  Angel usually likes it.  Per my mom she called this "kiki" soup.  Filipinos know what this word means.  This is 1st time making the tortellini soup this way.  But still really good.   For cold weather this is great for dinner.  Easy and affordable.

Ingredients:

1 pkg tortellini
1 lb sausage
2 tbsp olive oil
Medium onion
1 cup diced carrot
4 tsp. Minced garlic
4 cans chicken broth
2 cups chopped spinach
1 cup frozen peas
4 tbsp parmesan cheese
4 tbsp prepared pesto
Salt and pepper

Direction:

1. In a large saucepan, heat olive oil over medium heat.

2. Add sausage until no longer pink. Add onion, carrot and garlic. Cook, stirring frequently until onion is transculent.

3. Add chicken broth and bring to boil.

4. Stir in tortellini and frozen peas.

5. Cook 5 to 8 minutes.  Reduce heat and stir in spinach,  cheese, pesto , salt and pepper to taste.

Serve immediately.

Macaroni And Cheese

I was looking for a homemade Mac n cheese recipe. I found this and planning to make this weekend. Crossing my fingers that everyone specially the girls will like it.

Ingredients:

1 (8 ounce) package macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup cream
1/2 teaspoon salt
fresh ground black pepper, to taste
2 cups cheddar cheese, shredded good quality
1/2 cup breadcrumbs, buttered

Direction:


1. Preheat oven to 400°F.

2. Cook and drain macaroni according to package directions; set aside.

3. In a large saucepan melt butter.

4. Add flour mixed with salt and pepper, using a whisk to stir until well blended.

5. Pour milk and cream in gradually; stirring constantly.

6. Bring to boiling point and boil 2 minutes (stirring constantly).

7. Reduce heat and cook (stirring constantly) 10 minutes.

8. Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.

9. Turn off flame.

10. Add macaroni to the saucepan and toss to coat with the cheese sauce.

11. Transfer macaroni to a buttered baking dish.

12. Sprinkle with breadcrumbs.

13. Bake 20 minutes until the top is golden brown.

14. (You can also freeze this recipe in zip-lock bags for later use - once you have mixed the macaroni along with the cheese sauce allow to cool to room temperature before adding to your freezer - I generally pull it out the night before and allow macaroni and cheese to reach room temperature; I then add the macaroni and cheese to a buttered baking dish, sprinkle with bread crumbs and then bake for 20 to 30 minutes, until golden brown on top and bubbling.

Follow-up:
Made this tonight 11/05/11, everyones loves it. The kids gave me a thumbs up; means a yes to make it again.
